ingredients
  • One refrigerator pie crust
  • 1/2 lb. of ground beef
  • 1 can tomato soup
  • 1 cup frozen corn
  • 1 small onion chopped
  • 2 Tbsp. chili powder
  • 1 box Jiffy corn muffin mix - (prepare according to box instructions)
  • 8-oz. shredded cheddar cheese
preparation tamale_pie (12K)
  1. Place pie crust in pie pan.
  2. Brown ground beef and drain excess fat.
  3. Add tomato soup, corn, onion and chili powder to meat.
  4. Let simmer for about 10 minutes.
  5. Pour into pie pan.
  6. Mix corn muffin mix with egg and milk according to package directions.
  7. Pour over meat mixture in pie pan.
  8. Bake at 350°F for 30-40 minutes until corn muffin mix is golden brown.
  9. Add shredded cheese to the top and return to oven for a couple minutes to melt cheese.
  10. Serve with your favorite salsa and sour cream, if desired.
