
Homemade Breads and Buns
No Knead Cinnamon Buns


- Combine:
- 1 cup milk
- 3 tbsp. shortening (I use butter)
- 3 tbsp. sugar
- 1-1/2 tsp. salt
- Scald and let cool.
- Combine and set aside for 10 minutes:
- 1 cup warm water
- 1 tsp. sugar
- 1 pkg. fast rising yeast

To the first mixture, once cooled, add 1/2 cup cold water (I actually added 1 cup cold water once, and the recipe was
even better!). Blend in 1 egg and add the yeast mixture.
Blend in 4-5 cups flour (if you add the extra water, you'll have to add more flour) to make a soft dough.

Set aside and let rest for 15 minutes, covered.
* Roll the dough out on a well floured surface, rectangularly about 8"x16". Combine 1-1/2 cups brown sugar and
2+ tsp. cinnamon (or to taste) and spread onto the dough. You can brush the dough first with softened or melted butter
first if desired.
Roll the dough up jelly roll style, starting with the shortest edge. Cut into 1 inch slices and place cut-side down
onto a greased 12"x15"x2" pan, about 2 inches apart.
Cover and let rise about 1 hour. Pour cream over the buns and bake in a preheated 350-375°F oven for about
20-25 minutes.

*Note: This recipe can also make delicious dinner buns. After the dough has rested, form into buns and place 2 inches apart on your greased pan. Cover, and let rise for 1 hour then bake for 20-25 minutes in a preheated 350°F oven. |
