This is a quick and delicious sauce to use with cold fish, shell fish and vegetables. You can also add some peeled and seeded cucumber to the mixture before pureeing to add an interesting flavor note.

Cold Avocado Sauce

Make about 1-1/2 cups

  • 2 firm-ripe avocados, 8 ounces each
  • 1 cup or so defatted vegetable or chicken stock
  • 3 tablespoons fresh lime juice
  • Drops of your favorite hot sauce
  • Kosher or sea salt and freshly ground pepper

Peel and discard seeds from avocados. Cut into chunks and add to a blender with the stock and lime juice and puree till smooth. Season to your taste with hot sauce, salt and pepper. Store covered and refrigerated for up to 3 days. Thin if desired with additional stock.
