Cranberry-Bourbon Relish

Yield: 1

Ingredients:

  • 1 C. Bourbon
  • 1 C. minced Shallot
  • zest of 1 large orange, grated
  • 1 bag (12oz.) fresh cranberries, rinsed and picked over
  • 1 C. sugar
  • 1 tsp. freshly ground black pepper

Instructions:

  1. In a small , non-reactive saucepan, combine the bourbon, shallots, and orange zest. Set over medium high heat and bring to boil. Lower the heat and simmer stirring the syrupy glaze on the bottom of the pan. About 10 minutes.

  2. Add the cranberries and sugar, stirring well until the sugar dissolves. Lower the heat slightly and simmer, uncovered, until most of the cranberries have burst, about 10 minutes.

  3. Remove from the heat and stir in the pepper. Transfer to a bowl, let cool to room temperature, cover and refrigerate.
