If you're not worried about calories, or have decided you deserve a treat, this is delicious!

Chicken Kiev

Preheat deep fryer to 325°F.

ingredients
  1. Bone, skin, and cut into halves and pound to a 1/4" thickness:
    • 4 chicken breasts

  2. Form into 8 balls:
    • 1/2 lb butter

  3. Roll butter balls in a mixture of:
    • 2 tbsp chopped chives
    • 2 tbsp chopped parsley
    • 1 minced clove of garlic
    • 1/4 tsp white pepper
preparation
  • Place one of the seasoned balls of butter in the center of each half breast and roll so that the butter is completely enclosed.

  • Secure with a toothpick, if necessary.

  • Dust with flour.

  • Brush with beaten egg.

  • Roll in dry bread crumbs and fry in deep fat until brown, about 5-7 minutes.

 

WASH HANDS, UTENSILS, SINK AND EVERYTHING THAT HAS BEEN IN CONTACT WITH RAW CHICKEN. Sanitize the counter, sinks and any containers or trays that have been used. Use a solution of 1 teaspoon of unscented chlorine bleach in 1 quart of water, and let dry completely.
