HOMEMADE COOKIES AND SQUARES
Whipped Shortbread Cookies (1)

• 1 cup soft butter
  
• 1-1/2 cups flour
  
• 1/2 cup icing sugar

Preheat oven to 300°F.

Sift the icing sugar and flour together. Add to butter. Whip with electric mixer for 10 minutes. Don't skimp on the whipping time.

Place spoonsful on cookie sheet or use cookie press.

Bake until lightly browned.

Yields about 7 dozen cookies.

Freezes well.
