HOMEMADE COOKIES AND SQUARES
Whipped Shortbread Cookies (2)

From: Fort Garry Kinettes, Manitoba, Canada.

• 1 cup soft butter
  
• 1/2 cup icing sugar
  
• 1/2 cup corn starch
  
• 1 cup flour
  
• 1/4 teaspoon salt

Preheat oven to 375°F.

Beat butter until light and fluffy. Slowly add the icing sugar while beating. Gradually add cornstarch, flour and salt, beating constantly. Impossible to over-beat!

Drop by teaspoonsful onto cookie sheet or use cookie press.

Bake for 8-10 minutes or until lightly browned.

Yields about 2 dozen.
