Cheese Cake Crust with Cognac should accompany this recipe.

Preheat oven to 375°F. Have all ingredients at 75°F (room temp.).

ingredients
  1. Combine:
    • 1-1/2 lbs ricotta cheese
    • 3 tablespoons toasted pine nuts
    • 2 tablespoons chopped blanched almonds
    • 2 tablespoons chopped citron and dusted with 1 tablespoon flour

  2. Beat until light and lemony in color:
    • 4 eggs

  3. Gradually add:
    • 1 cup sugar
    • 1-1/2 teaspoons vanilla

preparation
Add the cheese mixture to the eggs until well blended.

Pour the filling into the unbaked crust and bake about 40 minutes or until done.
