RICOTTA CHEESE PIE OR CAKE
Cheese Cake Crust with Cognac should accompany this recipe.
Preheat oven to 375°F. Have all ingredients at 75°F (room temp.).
- 1-1/2 lbs ricotta cheese
- 3 tablespoons toasted pine nuts
- 2 tablespoons chopped blanched almonds
- 2 tablespoons chopped citron and dusted with 1 tablespoon flour
- Beat until light and lemony in color:
- Gradually add:
- 1 cup sugar
- 1-1/2 teaspoons vanilla
Add the cheese mixture to the eggs until well blended.
Pour the filling into the unbaked crust and bake about 40 minutes or until done.
