WHEATLESS PIE CRUST
Makes 1 9-inch Single Crust

- » Sift 6 times:
- 1/2 cup cornstarch
- 1/2 cup finely milled rye flour
The repeated sifting is very important.
- Add and Work as for pastry:
- 1/2 cup fine dry cottage cheese
- 1/2 cup 70° butter
- 1/2 teaspoon salt

Chill the dough from 2-12 hours.
Roll and place in pans.
