ingredients
  • 3 pound flank steak, trimmed of fat
  • 1/4 teaspoon crushed red pepper
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 teaspoons soy sauce
  • 1/4 cup peanut butter, no sugar added
  • 1/4 teaspoon garlic powder
  • 1 tablespoon rice wine vinegar
  • 1/4 teaspoon black pepper

preparation

  • Preheat oven broiler.

  • Put steak in broiler pan and brush with 1 tablespoon soy sauce and sprinkle with black pepper.

  • In a saucepan, mix red pepper, oil and garlic powder. Heat on medium for about one minute.

  • Add peanut butter, rice wine vinegar and 1 teaspoon soy sauce with 1/2 cup water. Stir constantly over heat until texture is smooth, for about two minutes. Keep warm over low heat.

  • Cook steak 3 inches from heat for about 7 minutes.

  • Turn, brush with remaining soy sauce and black pepper.

  • Broil for 7 minutes more, or longer for well-done steak.

  • Slice meat after letting it sit for five minutes.

  • Makes eight servings.

Per serving: 367 Calories; 2g Carbohydrates; 1g Fiber; 24g Fat; 35g Protein; 463mg Sodium; 87mg Cholesterol.
