
Pies, Tarts and Pastries
AMY’S BUTTER TARTS
Makes approximately 1 dozen large tarts or 18 medium.

- 1 cup brown sugar
- 2 tablespoons butter
- 1/2 cup corn syrup
- 2 eggs
- 3/4 teaspoon vanilla
- 1 cup raisins

- Mix ingredients in order given.
- Put in unbaked tart shells and bake at 350°F for 20 minutes or until lightly browned.

You may add currants or coconut as well as the raisins; mixed fruit is a nice change.
Another alternative is to put a spoonful of jam in the bottom of the tart and cover it with the filling, omitting the raisins. |
