ingredients
  • 4 eggs
  • 1/2 cup butter
  • 1/2 cup flour
  • 2 cups milk
  • 1 cup sugar
  • 1 cup coconut
  • 2 tsp vanilla
preparation
  • Preheat oven to 350°F.

  • With your electric mixer, cream butter.

  • Add eggs and cream well.

  • With your mixer on low, add the sugar, milk and vanilla until well blended.

  • Slowly add the flour until well blended. Batter will be quite liquidy.

  • Stir in coconut.

  • Pour into a 10" greased pie plate.

  • Bake for 1 hour, or until center is firm. An inserted knife or toothpick should come out clean. The top should be lightly browned.

  • Serve hot or cold.
The flour forms a pie crust, coconut forms the topping and the center is an egg custard filling. Very delicious, very quick and easy to make. Great when unexpected company arrives! Looks Good Too!
