
Pies, Tarts and Pastries
IMPOSSIBLE PIE
- 4 eggs
- 1/2 cup butter
- 1/2 cup flour
- 2 cups milk
- 1 cup sugar
- 1 cup coconut
- 2 tsp vanilla

- Preheat oven to 350°F.
- With your electric mixer, cream butter.
- Add eggs and cream well.
- With your mixer on low, add the sugar, milk and vanilla until well blended.
- Slowly add the flour until well blended. Batter will be quite liquidy.
- Stir in coconut.
- Pour into a 10" greased pie plate.
- Bake for 1 hour, or until center is firm. An inserted knife or toothpick should come out clean. The top should be lightly browned.
- Serve hot or cold.

The flour forms a pie crust, coconut forms the topping and the center is an egg custard filling. Very delicious, very quick and easy to make. Great when unexpected company arrives! Looks Good Too! |
