Quick and Easy Salad Favorites
CUCUMBER SALADS
Cucumber Salad #1

This salad is great with any meal. I use low-fat or no-fat mayonnaise in the dressing. The jalapeno adds a wonderful zest! Go easy on the salt. I've also used the same ingredients in a stir-fry, omitting the mayonnaise altogether and adding Chinese Cabbage, chopped into 1 inch cubes and 2 tbsp Soy Sauce. Also delicious! |

- 1 peeled, thinly sliced cucumber
- 1/2 onion, thinly sliced
- 2 tbsp coarsely chopped celery (optional)
- 1/2 medium sized tomato, halved and sliced (optional)
- 2 tbsp vinegar
- 2 tbsp white sugar (I use about 1/4 cup Sweet Pickle Juice)
- 1/4-1/2 cup salad dressing (mayonnaise is best)
- 2 tsp jalapeno juice (optional)
- 8-12 finely chopped jalapenos (optional)
- 1 dill pickle, finely chopped
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- pinch of salt
- pepper

- Slice the vegetables and toss.
- Mix all other ingredients together before adding to the vegetables.
- Mix and toss well.
- Let stand about 1/2 hour before serving.
Cucumber Salad #2


- Combine Cucumbers with:
- French Dressing or Sour Cream Dressing (below)
Serve at once.
Cucumber Salad #3
Tomato & Onion

- Medium-size tomatoes, skinned and chilled
- Thinly sliced Bermuda Onion or Cucumber

- Cut 5 or 6 crosswise gashes in the tomatoes, equal distances apart.
- Place in each gash a thin slice of Bermuda onion or cucumber.
Serve the tomatoes on lettuce or water cress with:
- French Dressing or Sour Cream Dressing
Sour Cream Dressing
 
- Add to it:
- 1 tsp grated onion or Fresh onion juice
- 1 tsp celery or dill seed
- 1/2 tsp salt
- white pepper
- (2 Tbsp chopped green or sweet red pepper)
French Dressing or Sauce Vinaigrette

- Combine in a small bowl and beat well with a wire whisk or a fork until they are smooth:
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 Tbsp olive oil
- 1 Tbsp vinegar or lemon juice
- (1/4 tsp dry mustard)
- Add:
- 2 Tbsp olive oil
- Beat well again.
- Add:
- 1 Tbsp vinegar or lemon juice
- 3 tablespoons olive oil
- Beat well again.
- Peel and add:
- (1 clove garlic, minced finely)
- Place the dressing in a jar, tightly covered, and store in refrigerator until used.
- Shake well before using.
- Best made just before use.
