Cucumber Salad #1

l This salad is great with any meal. I use low-fat or no-fat mayonnaise in the dressing. The jalapeno adds a wonderful zest! Go easy on the salt. I've also used the same ingredients in a stir-fry, omitting the mayonnaise altogether and adding Chinese Cabbage, chopped into 1 inch cubes and 2 tbsp Soy Sauce. Also delicious!

  • 1 peeled, thinly sliced cucumber
  • 1/2 onion, thinly sliced
  • 2 tbsp coarsely chopped celery (optional)
  • 1/2 medium sized tomato, halved and sliced (optional)
  • 2 tbsp vinegar
  • 2 tbsp white sugar (I use about 1/4 cup Sweet Pickle Juice)
  • 1/4-1/2 cup salad dressing (mayonnaise is best)
  • 2 tsp jalapeno juice (optional)
  • 8-12 finely chopped jalapenos (optional)
  • 1 dill pickle, finely chopped
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • pinch of salt
  • pepper
  1. Slice the vegetables and toss.
  2. Mix all other ingredients together before adding to the vegetables.
  3. Mix and toss well.
  4. Let stand about 1/2 hour before serving.
