
Quick and Easy Salad Favorites
Fajitas Ramen Salad
Recipe from Mary Stevenson
- 1 tbsp chili powder
- 1 tbsp oil
- 2 half chicken breasts, boned and skinned
- 1 red or green pepper, cut in strips
- 1/2 red onion, thinly sliced
- assorted greens
- 1 pkg maruchan chicken ramen, broken or crushed.
- avocado and tomato wedges.
Dressing:
- 4 tbsp lime or lemon juice
- 2 tbsp soy sauce
- ramen seasoning packet
- 1 tsp sugar
- 2 tbsp oil
- 2 tbsp chopped cilantro (1 tsp dried)

- Pat chili powder onto chicken breast; brown in hot oil.
- Cover, cook until done.
- Remove and cut into strips.
- Sauté pepper strips in pan.
- Whisk dressing ingredients together.
- Toss with chicken, pepper strips, onion and broken ramen noodles.
- Serve on greens.
- Garnish with avocado and tomato.
